One of my all time favourite things to do in hot weather is to eat ice cream. However, as I follow a mostly plant-based diet, I often end up feeling guilty for eating cow’s milk based ice cream or going without.
Years ago this would have been a big problem, however nowadays there are hundreds of vegan ice cream recipes (also commonly referred to as “nice cream”) available that are relatively quick and simple to make.

To churn or not to churn
Some of the recipes above are “no-churn” meaning there is no need for an ice cream maker. However, for some of the recipes, an ice cream maker may be necessary.

So many flavours, not enough days of summer
I’m not sure if we’ll even get 35 days of summer here in the UK, however, in my mind, that’s all the more reason to try a couple of flavours each day.
My all time favourite ice cream flavour is Mint Chocolate Chip, but I’ll definitely be teaming it up with many of the other flavours mentioned above. Rum and raisin, chunky monkey and cookie dough, to name a few.
Now, don’t worry if even the thought of making your own ice cream leaves you feeling hot and bothered. Thankfully, there are now many shop-bought dairy-free ice creams available at major supermarkets and health food stores.
